“L’Artigiano Perugino” is the enterprise of the master chocolatier Fausto Ercolani, who loves to mix fine cocoa selections Mono origin from Ecuador, Venezuela, the Dominican Republic, with the best quality dried fruit, spices, spirits, to give life to tasty creations that surprise every time for the variety of flavors: chocolate bars with spelled, the prized chocolate with olive oil, dragees and pralines. The processing is purely artisanal. The production has recently been enriched with chocolate high polyphenolic content, the result of collaboration with the universities of Perugia and Camerino, covered by PATENT, called GRAN CRUDO PERUGINO. The activity also includes participation at national and international confectionery industry fairs and in this sector the wnterprise has realized the first ITINERANT EUROPEAN CULTURAL FACTORY which is composed of machinery assembled that shows the entire production process starting from dried cocoa beans to chocolate bar.
This “Factory” is available to schools and adults in order to divulge and explain the value and the difference between artisan and industrial chocolate.
